Easy keto-friendly coconut flour pancakes
Apart from being low in carbohydrates, coconut flour is high in fibre, protein, and healthy fats. The flour is also a low glycemic index, and is excellent for people suffering from diabetes. This recipe is a great keto-friendly breakfast idea, as well as a brilliant snack idea.
Ingredients
- Quarter cup coconut flour
- 1 spoon Xylitol/Stevia sweetener
- 1/2 teaspoon baking powder
- 4 eggs
- Pinch of salt
- Few drops vanilla essence
- 1/4 quarter cup coconut milk
Method
- In a mixing bowl, mix together the flour, baking powder, salt, xylitol, pepper
- Beat the eggs and vanilla essence together
- Add the mixture to the dry ingredients and knead until well blended
- Add the coconut milk to form a batter
- Heat the coconut oil in a frying pan, and fry the mixture in batches
