Easy keto-friendly coconut flour pancakes

Apart from being low in carbohydrates, coconut flour is high in fibre, protein, and healthy fats. The flour is also a low glycemic index, and is excellent for people suffering from diabetes. This recipe is a great keto-friendly breakfast idea, as well as a brilliant snack idea.


  • Quarter cup coconut flour
  • 1 spoon Xylitol/Stevia sweetener
  • 1/2 teaspoon baking powder
  • 4 eggs
  • Pinch of salt
  • Few drops vanilla essence
  • 1/4 quarter cup coconut milk


  • In a mixing bowl, mix together the flour, baking powder, salt, xylitol, pepper
  • Beat the eggs and vanilla essence together
  • Add the mixture to the dry ingredients and knead until well blended
  • Add the coconut milk to form a batter
  • Heat the coconut oil in a frying pan, and fry the mixture in batches
