Cabbage and Tuna Stir-Fry
This recipe is a low carb, gluten free take on a traditional classic. You will definitely enjoy it!
Ingredients
- 1/2 Cabbage Head
- Olive Oil
- 1/2 White Onion
- Fresh Thyme
- Spring Onions
- 1 clove of garlic
- Cherry Tomatoes
- Yellow Pepper
- Green Pepper
- 2 tins of Tuna
- 1/2 cup of Sweet Corn
- Ketchup
- Salt and Black pepper to taste
Preparation
- Pour two tablespoons of olive oil into a frying pan
- Cut up your vegetables into bite-sized pieces and add them to the oil in the frying pan one after the other:
- Cabbage
- Garlic
- White and Spring Onions
- Fresh Thyme
- Carrot
- Cherry Tomatoes
- Green, Yellow and Green Pepper
Procedure
- Place the frying pan on a medium heat. Sprinkle black pepper, a pinch of salt and mixed herbs for flavour. Do not cover the pan while frying.
- Sauté until the vegetables are crisp tender – about 10 minutes.
- Keep stirring while the vegetables cook. Do not cook the cabbage for too long to preserve the crunchiness.
- Once the cabbage becomes tender, add the sweet corn and continue to stir.
- Add the tuna after 3 minutes and continue frying.
- Pop a little bit of ketchup to add up the flavour and stir.
- Leave to cook for 5 more minutes and turn off the fire.
- Food is ready!
